I never thought that truffles made of a mix of cheese covered in different flavours and texture would turn out to be fabulous.

I didn’t add everything about the original recipe, and yet they were awesome.

They were absolutely wonderful. They are very cheerful, full of colour and flavour and a creamy texture. What can I say, a perfect way to start your meal, and why not , you Valetntine’s Day romantic dinner.

We drank one of the best sparkling, white wines “Franciacorta”. The bubbles and the freshness of it makes it appropriate for the soft and creamy cheese truffles.

  1. Blend the Gorgonzola and the Parmesan and the Ricotta cheese.
  2. Once they are well blended, add the ricotta and keep blending until they are well mixed and unrecognizable. If you can, it's best to prepare and keep this mixture in the fridge for 10 or 12 hours.
  3. Put in different plates the chives, poppy seeds and the sweet paprika
  4. Take a teaspoon of the mixture and roll it into a small ball, then pass it on one of the ingredients.
